I'm jealous... Seriously.

Used to have the sweetest very old black lady that lived down the road from us growing up named Mrs. Violla. She would give us a few dollars to afford 4-10 shells and we would go hunt squirrels for her during squirrel season. She would clean them that night and then you'd have to come back early the next morning on Saturday morning to get your biscuits and gravy! It was amazing.

Damn this post brought back some memories... This was right before my older/only brother got cancer and passed away in 96' at 15 years old.....

This is the best and most recent article I could find. It says this guy who got CFJD probably got it from squirrel brains, BUT the same article says he liked to hunt and eat other game as well. So there is no way to know for sure from the article. I found a Lancet study regarding the squirrel brain man, but I can't figure out what it was trying to say.

Can you get sick from eating the brain?

Cows (bovine spongiform encephalopathy) = yes

Sheep (scrapie) = no

Deer/Elk (chronic wasting disease/zombie disease) = unknown

Pig = no

Horse = no

Squirrel = unknown, but risk is likely very low

can't imagine a squirrel brain is more than a teaspoons worth, so probably not worth it. But from what I read the meat is good, and useful/abundant if you're hungry

A mix of fat and flour which is a component in many sauces and gravies. When making sausage gravy the roux is generally made from the rendered fat and pan drippings which come from browning the sausage. All due respect, we don't speak English.

The English speak some strange language with words like "bumbershoot" in place of the correct American word "umbrella", and "boot" and "bonnet" instead of "trunk" and "hood". I don't have a fucking bonnet covering the engine in my truck and neither do you. They also waste lots of pinky-raising effort with extrua vouwels when they are absouloutely unnecessaruy, in words like "colour" and "neighbour". Also, this letter Z is pronounced "zee", not fucking "zed". More unnecessary bullshit.

its french. but maybe cajuns do something special to it, idk. I'm freaking norwegian and I also roux. We are really big on anything you can make with butter and flour. Except croissants, we won't put that much work into a dough just to make it fancy. Just smash it up, roll it out, bake it, and slap some jam on it.

The only time we'll spend that long on a bread is to turn it into a hat. Perhaps you think I'm joking. I assure you I am not.

Also the biggest difference between Cajun food and Creole minus Cajun food does not usually use tomatoes, is the roux. Cajun roux is cooked longer so it is darker and richer. Creole roux is not cooked as long and is lighter in both flavor and color.
